MOJITO
10 fresh mint leaves
1/2 lime, cut into 4 wedges
2 TBLS. simple syrup
1 cup ice cubes or crushed ice
1 1/2 oz. white rum
1/2 cup club soda
Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.
CITRUS PUNCH
3 oz. fresh orange juice
2 oz. pineapple juice
2 oz. cranberry juice
2 oz. sparkling water
crushed ice
sliced fruit and mint for garnish
Combine juices and sparkling water, pour over crushed ice and garnish with fresh fruit and mint.
SUMMER PUNCH
1 oz. Pineapple Rum
1 oz. Dark Rum
1 oz. Coconut Rum
2 oz. Orange Juice
2 oz. Lemonade
Pineapple Wedge
Combine all ingredients in a glass and serve over ice with a pineapple wedge garnish! Be careful...This cocktail will sneak up on you! :)

BOURBON OLD FASHIONED
1/2 tsp. brown sugar
3 dashes orange bitters
1 tsp. water
2 ounces your favorite bourbon
Add the sugar, bitters and water into a rocks glass, and stir until sugar is nearly dissolved. Fill the glass with large ice cubes, add the bourbon, and gently stir to combine the flavors. Express the oil of an orange peel over the glass, then drop in. I like to burn the orange peel with a torch. This adds a smoky element to the cocktail. Enjoy!
KINKY PINKY
2 ounces raspberry vodka
3 ounces cranberry juice
1 ounce peach schnaps
Add all of the ingredients into a cocktail shaker with some ice. Shake until well chilled and strain into a cocktail glass and garnish with a lime slice. MMMmmmm!


DIRTY SHIRLEY
2.5 ounces vodka
1 ounce fresh lime juice
1/4 ounce grenadine
3 ounces ginger beer
garnish with fresh lime, or cherries or brandied soaked cherries
Add all of the ingredients into a cocktail shaker (except the ginger beer) with some ice and shake until well chilled. Add the ginger beer and shake gently. Strain into a cocktail glass and garnish with fresh lime and cherries.
